The Lamy family has been working in Saint-Aubin since the mid-17th century. Hubert Lamy created his domaine in 1973 with just over 8 hectares at his disposal. Today, it covers 18.5ha and produces wines in 18 appellations. Olivier Lamy, who joined the domaine in 1995, is a pioneer and an experimentalist. He doesn’t care for fashion, just progression to make the best wine he can. In recent years, Olivier has reduced the amount of new oak while introducing larger barrels (600L) or at times even no oak at all (like in 2019). He is also an advocate for using cold fermentation and longer élevage. Further developments have taken place in the vineyards, where we have seen higher density plantings, very low yields and early picking (Olivier is usually the first one to start). Today Olivier is one of the best ambassadors of the Saint-Aubin appellation.
From Bourgogne Blanc to Puligny to Santenay, the whites and underrated reds are well worth adding to your cellar. One is hard pressed to find a more precise and meticulous winemaker operating in Saint-Aubin. For us, the wines are superb in their integrity and elegance, they are intellectual and terroir specific and are immensely enjoyable.
